Mardi gras Donuts


  • 500 g flour
  • 1 bag (7g) of dry yeast or half a cube (15g) of fresh yeast
  • 250 ml warm milk
  • 75 g melted butter
  • 4 egg yolks
  • 1 vanilla clove
  • 30g sugar
  • 3 tablespoons of rum
  • Pinch of salt
  • Sunflower oil
  • Powdered sugar
  • Filing of your choosing (I use marmalade or nutella)

*They can also be served without a filling*

If you’re using fresh yeast, cut it in small pices and put it in a bowl. Add a spoon of sugar and stir until it turns liquid. Then add 5 tablespoons of warm milk and let it rais for 15 minutes.

First mix together in a bowl all the dry ingredients (flour, salt and dry yeast if using).

Then in a seperate bowl mix the sugar with the egg yolks so you get a smooth cream.

Add the fresh yeast to the dry ingredients and mix, than add one ingredients by one the egg yolks, milk and butter. At the end just add the vanilla beans and rum and mix for 15minutes.

Form small balls of dough and let tgem rest and raise for another 30 minutes. They have to double in size.

Fill a pan with oil (about 1,5 l of oil) and fry the dough balls. When the oil stops to shimer around them, turn them and wait again. It takes about 10s on each side for the donut to turn brown.

Dry them on paper towels and cover them with powdered sugar. Fill them with the filling of your choosing with a pipinh bag.
