Ingredients (2 plates of small meringues):
- 100g egg whites
- 200g sugar
- Optional ingredients: cocco powder, cinnamon, vanilla…
This recipe is easy to make but it requires a lot of precision and patience.
Preheat the oven to 100°C.
Put the two ingredients in a pan and put it over heat. Using a termometer, stir until it reaches 37°C.
The put the ingredients in a bowl and immediately start mixing with an electrix mixer. You will have to do it for 10 minutes. The egg whites have to be so hard that they hold still to the mixer when you pull it out.
*If you deside to add an extra ingredient, add it at the end, when the egg whites are already beaten*
Put the egg whites in a piping bag and make small meringues on parchment paper. Put them in the oven let them bake for at least 1hour. They shouldn’t be chewy on the inside when done.
(I made chocolate-with coco powder and basic meringues)
