- 250g chocolate
- 250g butter
- 6 eggs (divided)
- 250g sugar
Preheat the oven to 180C.
You start by melting chocolate and butter over a pan of boiling water. You will get a shiny and smooth liquid. Put it away for the heat and let it cool a little bit.
In a small bowl beat the egg whites until the become hard.
In a separate bowl mix together the egg yolks and sugar. Mix until the mixture becomes smooth and pale, then add the melted chocolate.
When the mixture is well mixed add the egg whites slowly, one quarter after another. Do not use an electric mixer because it will break the texture of the egg whites.
It is ready when all there are no more chunks of egg whites in the batter.
Put the batter in a pan, covered with parchment paper and let it bake for 30 minutes, until there is a hard crust on top.
Let it cool before serving, so the cake gets that typical meringue look.
