Overnight Ciabatta Bread

  • 400g plain flour (+ you’ll need about 3 more tablespoons to flour the surface)
  • 330 ml of water
  • Teaspoon of salt
  • Teaspoon of dry yeast

One night before you want to serve your bread prepare the dough.

With a wooden spoon mix together all the 4 ingredients. It will require a lot of hard work to get it to a smooth form like in the picture underneath.

When the dough is ready close it well and let it rest overnight at room temperature.

The next day flour the dough and let it rest for another 30min. It is crucial it is not let to rest for more than 30min or it will not raise perfectly during baking.

Bake it at 230C for 30min.

Do not serve it straight from the oven, let it cool for 15min.
