- 1/2 cup coconut oil
- 1/2 cup coconut sugar
- 6 tablespoons pumpkin puree
- 1 1/2 cup whole wheat flour
- Baking soda
- Hazelnut spread (Nutella) or hazelnuts
Preheat the oven to 180C.
In a large bowl mix together coconut oil,coconut sugar and pumpkin puree. It will become very smooth.
In a smaller bowl combine the dry ingredients. Then add them to the pumpkin and mix well.
I devided the dough in half and added to one nutella. Don’t mix it in completely as you want to achieve a swirl like texture.
If you want to add nutella u can just add some nuts like hazelnuts or nothing.
The dough is very sticky so I suggest you use a spoon while forming the cookie balls. Place them on parchment paper and let them bake for about 15min.
