- 2 1/2 cup oats (or 1 1/2 cup of oat flour + 1 cup of rolled oats)
- 1 cup mashed bananas (or applesauce)
- 2 tablespoons chia seeds (let the sit in 1/2 cup of water)
- 3/4 cup of non-diary milk (I used oat)
- 1/3 cup honey
- 2 teaspoons baking soda
- Pinch of salt
You can add to the muffins what ever you want. In this recipe I used chopped almonds, cinnamon, nutmeg and raisins.
First roast all the oats in a pan. It is not mandatory but it gives them an extra flavor. Then you divide them in portions of 1 1/2 (for the flour) and 1 cup. Let them cool.
Preheat the oven to 180C.
Place the 1 1/2 cup of oats in a blender and pulse until it turns into a rough flour.
Mash the bananas and add chia seeds, milk and honey. If you want to add any spices this is the right time. After mixing all the ingredients together I added cinnamon and nutmeg.
Now add all the dry ingredients, including the oat flour and mix. Add the roasted rolled oats and let it sit for 10 min.
Line the muffin tin with muffin wrappers and scoop in the dough. If you have any oats left, sprinkle them on top of the dough.
Let them bake for 20-30min.
