Ingredients (for four people):
- 500g (4 cups) cherry tomatoes
- 1 medium ripe tomato (weights around 150g)
- 2 tablespoons of olive oil
- Fresh basil
- Pinch of salt
Cut the cherry tomatoes in small pieces and cover them with a pinch of salt. Let them rest for a little bit.
Meanwhile peal the tomatoe and cut it in small pieces. Put them in a pan with hot oil and stir.
When the tomatoes in the pan start to release their juice add the cherry tomatoes. Stir and let them cook for a couple of minutes.
The tomatoes will start to soften and let out more juice. Then add the olives,basil and origano.
Stir for a couple of more minutes and when the tomatoes completely soften it’s ready.
I like to use the sauce on pasta but it goes well with many other dishes like pizza, cuscus…
